Warm Açaí Apple Breakfast Crumble for Two
This warm açaí apple breakfast crumble keeps the comfort of a winter bake while adding the bright, deep-purple character of açaí. It is sized for two, uses ordinary South African pantry ingredients and is ready in about 35 minutes.

Ingredients
For the açaí apple filling
- 300 g firm apples, cored and cut into 1.5 cm cubes (about 2 medium apples)
- 30 ml water
- 10 ml fresh lemon juice
- 8 g VitaLuma Organic Açaí Berry Powder (about 2 level teaspoons)
- 10 g cornflour (about 1 level tablespoon)
- 15 ml honey or maple syrup, optional
- 2.5 ml ground cinnamon
- Small pinch of fine salt
For the oat topping
- 60 g rolled oats
- 30 g plain flour
- 20 g chopped pecans or almonds, optional
- 20 g light brown sugar
- 1.25 ml ground cinnamon
- Small pinch of fine salt
- 30 g unsalted butter or coconut oil, melted
To serve: 120 g plain yoghurt, optional.
Method
- Heat the oven. Preheat to 190°C conventional or 170°C fan. Lightly grease the baking dish.
- Mix the açaí base. In a bowl, whisk the water, lemon juice, açaí powder, cornflour, honey or maple syrup if using, cinnamon and salt until smooth.
- Coat the apples. Add the diced apples and toss until evenly purple. Scrape the mixture, including all liquid, into the baking dish.
- Make the topping. In a clean bowl, stir together the oats, flour, nuts if using, brown sugar, cinnamon and salt. Pour over the melted butter or coconut oil and mix until small clusters form.
- Assemble. Scatter the topping evenly over the apples without pressing it down.
- Bake. Bake for 23–27 minutes, until the top is golden and the purple filling is bubbling around the edges. If the topping colours too quickly, cover loosely with foil for the final 5 minutes.
- Rest and serve. Leave for 5 minutes so the filling can thicken slightly. Spoon into two bowls and add plain yoghurt if desired.
Practical tips
- Choose firm apples: Pink Lady, Granny Smith or a mix will keep better texture than very soft apples.
- Adjust sweetness after tasting: Açaí is earthy and gently tart. Sweet apples may not need the optional honey or maple syrup.
- Keep the powder in the filling: Whisking it into the liquid first gives a more even colour and avoids dry pockets.
- Make it nut-free: Omit the nuts and add another 15 g rolled oats.
- Make it dairy-free: Use coconut oil in the topping and serve with a plant-based plain yoghurt.
Storage and reheating
Cool leftovers, cover and refrigerate for up to 2 days. Reheat in a 170°C oven for 8–10 minutes to refresh the topping, or microwave individual portions until hot. The topping will soften in the microwave but the flavour remains good.
