Creamy Goji Berry Breakfast Smoothie
This creamy goji berry smoothie is a quick way to use goji powder in an everyday South African breakfast. Banana gives it body, strawberries add freshness, and goji berry powder brings a gently tart fruit flavour and warm coral colour. The recipe makes one generous serving and is easy to adjust for dairy-free kitchens.
Prep time: 5 minutes
Serves: 1
Equipment: Blender
Ingredients
- 250 ml cold milk or unsweetened plant-based milk
- 1 small frozen banana, sliced
- 80 g frozen strawberries
- 2 teaspoons VitaLuma Pure Goji Berry Powder
- 30 g plain yoghurt or unsweetened plant-based yoghurt
- 1 tablespoon rolled oats, optional
- 3–4 ice cubes, only if needed
Method
- Pour the milk into the blender first. Add the goji berry powder and blend for about 10 seconds so the powder disperses evenly.
- Add the frozen banana, strawberries, yoghurt and optional oats.
- Blend for 30–45 seconds, or until completely smooth. Stop and scrape down the sides if needed.
- Check the consistency. Add a small splash of milk if it is too thick, or a few ice cubes if you prefer it colder.
- Pour into a glass and serve immediately.
Why the recipe works
Adding liquid before powder reduces dry pockets around the blender blade. Banana contains starch and pectin that help create a creamy texture, while frozen fruit thickens the drink without needing a large amount of ice. Goji berry powder disperses through the smoothie, giving an even fruit flavour and colour. The exact colour will vary naturally from batch to batch.
This is a food recipe, not a treatment or substitute for a varied diet. Its nutritional profile depends on the milk, yoghurt and optional ingredients you choose.
Easy South African variations
- Rooibos twist: Replace 100 ml of the milk with strong, chilled, unflavoured rooibos tea.
- Summer stone fruit: Replace the strawberries with 100 g frozen peach or nectarine.
- Less sweet: Use half a banana and add a few extra strawberries.
- More filling: Include the tablespoon of oats and allow the smoothie to stand for two minutes before drinking.
Storage
This smoothie is best served just after blending. If necessary, refrigerate it in a sealed container for up to 24 hours and shake well before drinking. Keep it cold and discard it if it has been left at room temperature for more than two hours.
Frequently asked questions
Can I use fresh fruit?
Yes. Use a fresh banana and strawberries, then add four to six ice cubes for a colder, thicker result.
Does it need added sweetener?
Usually not. A ripe banana provides sweetness, but you can adjust the recipe after tasting rather than sweetening it before blending.
How much goji powder should I use?
Start with 2 teaspoons for one large smoothie. If you are new to the flavour, begin with 1 teaspoon and adjust to taste.
