Açaí berry overnight oats topped with banana, berries, coconut and seeds

Açaí Berry Overnight Oats with Banana & Berries

These açaí berry overnight oats turn familiar pantry ingredients into a colourful make-ahead breakfast. The oats soften slowly in the fridge, while açaí berry powder adds deep berry flavour and a natural purple swirl. Prepare it the night before for an easy weekday morning or double the quantities for two portions.

Prep time: 10 minutes, plus chilling
Chill time: At least 6 hours
Serves: 1

Ingredients

  • 45 g rolled oats
  • 10 g chia seeds, about 1 tablespoon
  • 1–2 teaspoons VitaLuma Organic Açaí Berry Powder
  • 180 ml milk or unsweetened plant-based milk
  • 60 g plain yoghurt or unsweetened plant-based yoghurt
  • 1 teaspoon honey or maple syrup, optional
  • Small pinch of salt

For serving

  • ½ banana, sliced
  • A small handful of strawberries or blueberries
  • 1 tablespoon toasted coconut flakes
  • 1 teaspoon pumpkin seeds

Method

  1. Combine the oats, chia seeds and salt in a jar or bowl.
  2. In a separate cup, whisk the açaí powder into the milk until no dry lumps remain. Stir in the yoghurt and optional honey.
  3. Pour the açaí mixture over the oats and stir thoroughly. Leave for five minutes, then stir again to distribute the chia seeds evenly.
  4. Cover and refrigerate for at least six hours or overnight.
  5. In the morning, stir the oats. Add a splash of milk if you prefer a looser texture, then top with banana, berries, coconut and pumpkin seeds.

The simple food science

Rolled oats gradually absorb liquid as they rest. Their starches soften and their beta-glucan, a soluble fibre naturally present in oats, contributes to the creamy texture. Chia seeds absorb water around their outer layer and form a gel, which helps keep the oats spoonable rather than watery.

Mixing açaí powder into the milk before adding it to the oats produces a more even colour and prevents purple specks. Açaí’s natural pigments can vary in intensity and may soften slightly during storage; this is normal and does not mean the recipe has failed.

Seasonal topping ideas

  • Summer: Strawberries, blueberries, peaches or nectarines.
  • Autumn: Sliced pear with a pinch of cinnamon.
  • Crunch: Toasted almonds or sunflower seeds.
  • Extra creaminess: Add another spoonful of yoghurt just before serving.

Storage and food safety

Keep the oats covered and refrigerated at 5°C or colder. Enjoy within two days. Add fresh fruit and crunchy toppings only when serving for the best texture. Do not eat the oats if they smell sour beyond the normal yoghurt tang or have been left unrefrigerated for an extended period.

Frequently asked questions

Can I warm overnight oats?

Yes. Heat them gently in a small saucepan or microwave-safe bowl, adding a splash of milk. The purple colour may become less vivid with heat, but the recipe will still taste good.

Can I make this without chia seeds?

Yes. Reduce the milk by about 30 ml, then adjust in the morning. The texture will be softer and less gelled.

Is açaí powder sweet?

Açaí powder has a deep, slightly earthy berry flavour rather than a strongly sweet taste. Add sweetener only after considering the ripeness of the fruit toppings.
