Cape Citrus Blue Matcha Lemonade
This Cape citrus blue matcha lemonade is designed for warm South African afternoons. Butterfly pea powder creates the clear blue base; fresh lemon shifts it towards violet as the acidity changes. The result is refreshing, lightly earthy and easy to prepare as either a still or sparkling drink.

Ingredients
- 1 teaspoon VitaLuma Organic Blue Matcha Butterfly Pea Tea Powder
- 200 ml warm water, about 70–80°C
- 500 ml cold still or sparkling water
- 60 ml freshly squeezed lemon juice, about 2 medium lemons
- 30–45 ml honey or simple syrup, adjusted to taste

- Lemon wheels and fresh mint, optional
Method
- Place the blue matcha powder in a jug. Add about 50 ml of the warm water and whisk until smooth, then add the remaining warm water. Leave to cool.
- In a second jug, stir the lemon juice and 30 ml honey or syrup into the cold water. Taste and add more sweetener only if needed.
- Fill four glasses with ice. Divide the lemon mixture between them.
- Slowly pour the cooled blue matcha infusion over the back of a spoon into each glass. This helps create a temporary blue-to-violet gradient.
- Garnish with lemon and mint. Stir before drinking; the colour will settle into violet as the acidic lemon disperses.
The colour-change science
Blue matcha is made from butterfly pea flower rather than the tea plant used for green matcha. Its natural blue pigments are sensitive to pH. Lemon juice lowers the drink’s pH, changing how those pigment molecules interact with light and shifting the visible colour from blue towards violet or pink.
The final shade depends on the acidity of the lemons, the mineral content of the water and the amount of powder used. The colour change is a normal ingredient response—not a test of product potency or freshness.
South African variations
- Naartjie citrus: Replace up to half the lemon juice with fresh naartjie juice. The flavour becomes rounder, although the colour may be less vivid.
- Rooibos version: Replace 200 ml of the cold water with strong, chilled green rooibos tea.
- Sparkling serve: Use chilled sparkling water and add it immediately before serving to preserve the bubbles.
- Less sweet: Begin with 15 ml honey or syrup, taste, and increase gradually.
Storage
For the brightest colour and freshest citrus flavour, serve the lemonade on the day it is made. The blue infusion can be prepared separately and refrigerated in a sealed container for up to 24 hours. Add sparkling water, lemon and ice only when serving.

Is blue matcha the same as green matcha?

Can I make the drink remain blue?
Use very little or no citrus. Once enough lemon is mixed through, the colour will naturally move towards violet. For a blue presentation, serve lemon wedges on the side.
Can I use boiling water?
Warm water is sufficient to disperse the powder. Very hot water is unnecessary and can flatten the drink’s delicate flavour.
