Golden Turmeric Latte Baked Oats

These turmeric latte baked oats turn the flavours of a golden latte into a warm breakfast. Banana keeps the centre soft, rolled oats add texture, and VitaLuma Turmeric Latte Golden Blend brings turmeric, coconut, cinnamon, ginger, black pepper and vanilla together in one easy spoonful.

Ingredients

  • 100g rolled oats
  • 1 large ripe banana, mashed (about 120g peeled)
  • 1 large egg
  • 180ml milk or unsweetened plant-based milk
  • 2 teaspoons VitaLuma Organic Turmeric Latte Golden Blend
  • 1 teaspoon baking powder
  • 1 tablespoon honey or maple syrup, optional
  • Pinch of salt
  • 2 tablespoons coconut flakes
  • Plain yoghurt and sliced banana, to serve

Method

  1. Heat the oven to 180°C. Lightly grease a small baking dish, approximately 18–20cm wide.
  2. In a mixing bowl, mash the banana until mostly smooth.
  3. Whisk in the egg, milk, turmeric latte blend and honey or maple syrup, if using.
  4. Add the rolled oats, baking powder and salt. Stir until evenly combined.
  5. Pour the mixture into the prepared dish. Scatter the coconut flakes over the top.
  6. Bake for 22–25 minutes, until the edges are set and the centre is still slightly soft. Rest for 5 minutes.
  7. Serve warm with plain yoghurt and sliced banana.

Easy variations

  • Berry: fold in 80g blueberries before baking.
  • Nutty: add 1 tablespoon almond or peanut butter to the wet mixture.
  • Vegan: replace the egg with 1 tablespoon ground flaxseed mixed with 3 tablespoons water; rest for 5 minutes before adding.
  • Individual portions: divide between two small oven-safe ramekins and begin checking after 18 minutes.

Can I prepare it ahead?

Yes. Bake, cool and refrigerate in a covered container for up to two days. Reheat gently, adding a splash of milk before serving if needed. For the best texture, add the yoghurt and fresh banana only after reheating.
